More About Carol

Eaton Golf club is very fortunate to have Carol as its Chef. Trained at Kelsteron College, Connah’s Quay, her skills were later honed by a Swiss chef who insisted on perfection.

Carol’s introduction to golf club catering came when she worked for Payne & Gunter whose event catering took her to Turnbury, Lytham St Annes, St Andrews and Wentworth.

Back in Wales Carol became catering manager at Bodelwyddan Castle for 7 years. It was there that her customers included Prince Charles and Princess Diana, John Major and Prince Edward. She co-ordinated outside catering for Parkland Events, Firework Displays and Laser Concerts for up to 5,000 people. Annually she would cater for 50 plus weddings. Also at the Castle she was responsible for all the catering for the Royal Welsh Fusiliers’ Dinners and those involving the Duke of Edinburgh Awards.

Her most trying project was providing full catering services for the Towyn Sea Wall disaster in 1990 when 2000 people were evacuated from their homes and businesses as a result of the floods and collapse of the sea defences. Carol ordered the food and co-ordinated catering for all the residents of Towyn and the emergency services 24 hours a day for 7 days.

At Eaton Golf Club Carol is happy to discuss and arrange special menus for any event whether it be a golf day or a private function.

More About Russ

It is not surprising that Russ won UK Golf Club Steward of the Year when you realise the experience he brought to Eaton Golf Club. His personality, sense of humour and professionalism endears him to members, staff and visitors.

Joining the royal Navy in 1983 and being trained in all aspects of the hospitality trade enabled him to take professional exams to become a Leading Steward. This took him in 1984/85 on an Exocet Leander Class Frigate to the Falklands and the Gulf. In ’87 he was back in the Falklands followed by a 10 month world trip. In 1992 he joined HMS Ark Royal on various tasks including peace keeping missions to Bosnia.

On land Russ spent 2 years as House Manager to Surgeon Rear Admiral at Gosport. Russ also worked with The Naval Secretary, Vice Admiral Malbon, and at the Old Naval Academy (a high ranking naval officers club) before being promoted to Chief Petty Officer.

In 2000 he was then selected to work for Lord West as House Manager and over the next 6 years was responsible for all functions both in residence and Admiralty Arches in Trafalgar Square which hosted Heads of State, Foreign Ambassadors and members of the Royal Family.
